I was a personal chef for a couple years before acquiring my own commercial kitchen. There, alongside my wholesale dessert line, I developed several fresh meals for my private customers. I also have the opportunity to teach workshops using many of these same meals, and of course, over the years, many have emerged as favorites, hence the title of this book: FAVES.
